- ginger
- potato starch
- Marinate chicken pieces in soy, sake, and ginger for 30 minutes.
- Coat in potato starch and deep-fry at 340 °F for 4 minutes.
- Rest 2 minutes, then fry again at 375 °F for 1 minute until extra crispy.
